Indulge in this warming, creamy chai latte! Packed full of spice and sweetened with Mount Somers Honey & Vanilla, it's a guilt-free drink you can enjoy any time of day. Make this with your choice of nut milk for a dairy-free alternative.
SERVES/MAKES:
2-3 (depending on the size of your mug)
COOKING TIME:
20 minutes or overnight for a stronger flavour
INGREDIENTS:
• 3 cups water
• 1 tbsp grated ginger or if you want it extra spicy use 2 tbsp.
• 1 tsp whole cloves
• 3 cinnamon quills, broken up into pieces
• 1 tsp cardamon pods
• 1/4 tsp ground black peppercorns
• 4 black tea bags
• 2 tsp vanilla extract
• 2-3 tbsp Mount Somers Honey & Vanilla (to taste)
• 1-1.5 cups milk (to taste)
• Sprinkle of ground cinnamon for the top
METHOD:
Into a medium pot add in water, freshly grated ginger, cloves, cinnamon, cardamon, honey, vanilla and black
pepper. Bring to boil and then reduce to a low heat. Simmer for 15 minutes.
After 15 minutes, add in the tea bags and turn off the heat. Let the tea brew for a further 5 minutes. Give it a stir with a wooden spoon and use the back of it to squeeze out the flavours in the tea bags and cardamon pods.
Remove tea bags.
Use a fine meshed sift and strain the chai tea into a small jug. OR for a stronger flavour put everything into a jar (spices and all) and leave in the fridge overnight.
Add the chai tea and milk in a small pot. Heat until a gentle bubble. To get the froth, use a whisk or an electric milk whisk to create a bit of fluff (optional).
Pour chai latte into mugs. Top with a sprinkle of ground cinnamon.
