The UMF™ grade is primarily based on the concentration of the organic compound methylglyoxal (MGO). The UMF™ certification tests key DNA markers from the honey to determine the single-origin source as well as potency.
In order to achieve this gold standard, the Manuka Honey is tested for three unique signature compounds. The honey must be monofloral, sourced and packaged in New Zealand to ensure authenticity.
