Lemon Delicious is one of our favourite desserts, so warming, comforting and truly nostalgic. We have taken the classic lemon delicious recipe up a notch with Mount Somers Honey & Lemon, giving it a little extra zing!
• 50g butter, room temperature
• 1/3 cup Mount Somers Honey & Lemon
• 1 tbsp lemon zest (approx. 1 large lemon)
• 1/2 cup lemon juice
• 3 eggs separated, room temperature
• 50g self raising flour
• 1 cup milk
• 1 tbsp icing sugar
• Ice cream or whipped cream to serve
Pre-heat oven to 170 degrees fan bake. Lightly grease 6 large ramekins and place in a deep oven proof dish.
Beat the butter, zest and honey together until smooth and pale. Add in yolks, lemon juice and flour and whisk until smooth. Gradually whisk in milk.
In a separate bowl whisk the egg whites until soft peaks form.
Fold the egg whites into the lemon batter until well combined.
Pour batter into the 6 ramekins. Fill the large oven proof dish with boiling water, approximately half way.
Bake in the oven for 30 minutes.
Once golden, take out of the oven. Once slightly cooled, dust with icing sugar. Serve warm with cream or ice cream.
