METHOD: Gently heat dark chocolate, 1/2 cup cream, orange zest, and honey in a double boiler. Take off the heat once the chocolate has almost fully melted. Set aside to cool while you whip the cream. In a separate mixing bowl, whip 1 1/2 cups cream and vanilla until soft peaks. Be careful not to over do it! Fold in 1/4 of the whipped cream into the chocolate. Gradually add the whipped cream as you fold into the chocolate. Transfer the mousse into four glasses or small jars. Cover and set in the fridge to set for 2-3 hours or overnight. Top with extra whipped cream, candied orange peels and grated chocolate.
